Chicken Goat Cheese Salads

The statistical consulting group to which I belonged at my old University would have a "farewell" lunch at the end of every semester. Once during this lunch, when I was trying to be healthy, I ordered a salad with a smattering of fruit and what I thought would be a smattering of chicken. It wasn't. It was an entire grilled chicken breast. So much for healthy! But, while that lunch might not have been as low-cal as I was looking for at the time, it was an inspiration for a simple salad that I could make at home.

Thanksgiving - Dessert

So, we finally (a full 2 months and change later) reach the end of the Thanksgiving meal: dessert. Last year, sis and I planned a delicious dessert and then forgot to ask the parents to stock the ingredients. Whoops! This year, we made up for that mistake in grand style. While sis and I are (obviously) great cooks in general, I think that dessert this past year was by far the best part of the day. We made parts: figs with goat cheese and peppered-honey and olive oil blood orange red navel orange cake.

Herbed Stuffed Chicken Breasts

For an easy weeknight meal that is fairly hands-off, I usually turn to my favorite meat: Chicken. Stuffed chicken breasts are a particularly nice way to have an easy, delicious meal that seems way fancier than it actually is. I tend to use this recipe for herbed stuffed chicken breasts as a base for these dishes.

Cranberry Meatballs and Goat Cheese Crisps (Thanksgiving)

Lunch on holidays in our family is always snack-oriented rather than meal-oriented.  This year, in addition to our usual cheese and vegetable assortment, we whipped up some cranberry meatballs and goat cheese crisps.
