In addition to making a quicker, less labor-intensive breakfast for Thanksgiving 2012, we also prioritized making a quicker, less labor-intensive lunch. Of course, as in prior years, we heavily featured cheese and wine.
In prior years, we also included several other recipes to round out lunch. Cranberry meatballs were included in the Thankgivings of 2010 and 2011. For Thanksgiving 2010, also made goat cheese crisps, and for Thanksgiving 2011, we made both marinara zucchini coins and and celery pear salad. This past year, in the interests or keeping lunch light and easy to make, we pulled together a beautiful balsamic carrot salad. This ended up being one of the hits of the day -- it's amazing how something with so few ingredients can taste so amazing! It was refreshing, flavorful, and a perfect complement to the cheeses. Highly recommended.
