So, we're taking a brief break from our family bakefest to explore one of my obsessions: cake batter. I love cake batter almost as much as I love icing. The other day, I had a severe craving for cake batter but did not want to commit to a full cake. Too many leftovers. So, I whipped up a quick and easy crave-fixing recipe for cake pancakes using store-bought cake mix.
Ingredients
1 cup cake mix (I used french vanilla)
1/2 teaspoon vanilla
1/4 teaspoon baking soda
2 tablespoons buttermilk
1 egg
1/3 cup water
Steps
1. Mix wet ingredients and dry ingredients separately
2. Toss wet and dry ingredients together, mix until just moistened
3. Pour pancakes onto heated skillet using a large spoon, flip when extremely bubbly
4. Scarf hot!
These pancakes taste great with butter and powdered sugar. They don't cook exactly like regular pancakes -- they need to bubble way more than usual pancakes before they flip, and are really better suited for small rather than large sized pancakes. I am thinking of replacing the baking soda with baking powder when (that's right, not if) I make them again. I'll let you know if that works out!

So true, but you know how it goes -- cravings must be fixed! Would love to go to Fabbioli -- is the Mrs. able to taste? Also, we should do it before the end of August when hubs and I lose all ability to go out anywhere (this is not hyperbole).
