Pumpkin Ravioli with Gorgonzola Sauce

I absolutely adore the recipe featured today. It is amazingly delicious and comforting, yet oh-so-healthy. Plus, it is an absolutely perfect recipe for fall. The fabulous recipe of which I speak? Pumpkin ravioli with Gorgonzola sauce.

This recipe does take some time -- so I recommend doing it if you want to eat late, if you get home early, or on a weekend. A few tips: First, as you may or may not know, we actually may hit a pumpkin shortage this year thanks to the hurricanes. I have ordered a number of cans of pure pumpkin online, and you might want to at least consider planning alternate meals when shopping for the ingredients, just in case your local grocery store is out (like ours is).

Also, I recommend liberally adding cloves and nutmeg to both the pumpkin mixture and the sauce. It adds a certain extra "fall" taste. Last, you might want to put the Gorgonzola away after measuring out what is required by the recipe. Otherwise, if you're anything like me, you won't be able to stop snacking on it while you cook!
