Three and a half years ago, the boy and I went to Kitty Hawk, North Carolina, and shared a beach house with some dear friends of ours for a week. We went boat fishing, did some karaoke, walked along the beach, read good books, and just spent time together. To save some money, we split up making meals. One morning, our friends introduced us to the easiest and tastiest breakfast, which changed the course of our lives in a delicious and eggy fashion: Eggs in a basket.
Also called eggs in a hole and many other variants, eggs in a basket are a simple, quick, delicious breakfast for anyone who is an egg fiend (like us!). There are really just 2 ingredients required: 1 egg and 1 slice of bread per egg-in-basket. Simply cut out a hole in the center of the bread, using a biscuit cutter if you please. Then, heat up a pan. Once the pan is heated, put in the bread, and break an egg into the center.
Cook, flip, and cook to desired doneness -- we do them over-easy. These are also easy to dress up: cook some bacon or sausage on the side, dribble cheese or salt on top -- the possibilities are deliciously endless. We eat them almost every day -- not joke -- and you should too!
